Ingredients:
1 stick margarine
1 stick butter
4 Tbsp oil
1 ¾ cups sugar
4 eggs
4 cups sifted flour
1 tsp baking powder
Pinch of salt
1 tsp vanilla
Cinnamon and sugar for sprinkling at end
Optional:
Melted chocolate
Or Cocoa powder
Or 1 cup nuts
Or 1 cup chocolate chips (mini ones work well)
Preheat oven to 350 degrees.
Beat margarine, butter, oil and sugar together. Add vanilla, eggs and beat together again.
Add 2 cups of flour, 1 tsp baking powder, and pinch of salt, beat together again. Add next 2 cups of flour, beat again Add melted chocolate or cocoa powder, if desired – eyeball it until the dough seems chocolaty enough for you. Stir in nuts or chips
Slip mats help prevent sticking, so either use them on baking sheets or spray baking sheets with nonstick spray.
Divide dough into two equal parts.
Shape each part into a loaf-like shape – sort of oblong/rectangular – not too narrow. Bake 30-35 minutes. Take out of oven and slice horizontally across the loaf to create “biscotti” shapes. Carefully lay each slice down on its side. Sprinkle with sugar and cinnamon if desired. Bake a second time for 5-10 minutes.
